February is great for shoulder season
Shoulder season - the term for the time between peak season and completely off-peak season travel - is a great time to travel to destinations on your bucket list. Being adjacent to peak season means that the weather is usually pretty good still, but the destinations won't be as crowded, and availability will be greater (pricing typically is favorable too)! So for February, the thing to think about is shoulder season, and here are a few options:
Europe's shoulder season is April - end of May and September - end of October typically.
New Zealand - October and March but beware, if you're looking to swim at all, those months may not be warm enough for you!
South America's shoulder season is March-May and September-November.
Safaris in Kenya & Tanzania - October through mid-December means less tourist but still pretty consistent game viewing on safaris.
